This course is designed to deliver the advanced application of Ayurveda dietetics, nutrition and wellness. One can learn and apply the knowledge of Ayurvedic diet through interesting practical assignments. The focus will be for students to understand the role of food in preventing and managing health imbalances. Concept of personalized nutrition in different phases like age, body constitution, health imbalances, professions etc, will be introduced. Guidelines for restoration and management of Dosha imbalances through Ayurveda nutrition will be discussed. One will also learn the Ayurvedic perspective on diet and lifestyle trends like fasting, cleansing and detox.
The fundamental theories in Ayurveda nutrition will be further discussed at a deeper level to apply in real life. Intense content on various foods and their properties will be taught to expand the avenues of real time solutions through right nutrition. This course will provide insight into modern food habits and food globalization to make students understand the ongoing changes in community nutrition.
There will be a minimum of 1.5 contact hours with one or more faculty every week for 10 weeks as a basic mandatory semester for the course. Voluntary 15 hours in person teaching and practical study will be offered in three days at weekend with extra credits.
The class is structured in a way that promotes interactive teaching, reference readings, discussion and debate. Interesting practical assignments to give hands-on experience of Ayurveda cooking and nutrition. Each class will consist of 1 hour teaching and 30 minutes for interaction on the topic. During the course, students will complete time to time assignments. The course will conclude with compulsory examination in MCQ form and submission of an essay. They need not be academic quality papers – but should be based on students’ self-reflection on what they have learnt and assimilated so far, and what has touched and inspired them deeply.
The 15 hours in person teaching and extra credits will be directed towards case discussion, diet plans and hands on experience in Ayurvedic restorative medicinal food preparation.
